Happy first day of FALL! Is it already time to start thinking about holiday shopping? good eats.

If you follow me on Pinterest, you probably see that I am CONSTANTLY pinning recipes. I mean, all the time. I decided I’ve got to quit pinning them if I’m not trying them out to figure out which ones I love and which ones I can delete. These three? Keepers.

The Quinoa Taco Salad can be made with all kinds of leftover veggies or meat that you have on hand – and the ancho-chipotle lime dressing is sooo good! 

This is almost too late in the season to post about, but it’s so good, I had to! Before tomatoes are gone, go grab some heirlooms and make the Zucchini & Heirloom Tomato Lasagna. It’s raw and you will NOT miss the pasta! You will be making both of the pesto’s for dips and to put on pretty much everything. Don’t want to make ricotta? I skipped that part and just got store bought… buffalo mozzarella is another great substitute.

I keep buying okra at the farmers market and love this simple and delicious Roasted Okra with Chili Oil. It’s the perfect side dish to anything you’re making (also, a healthier version than the fried okra we all love). ENJOY!
